For Mediterranean stuffed Portobello mushrooms, first for the filling, finely chop the brown bread together with the remaining ingredients and season with salt and pepper.

Break the stem from the mushrooms. Season the mushrooms with plenty of salt and olive oil, stuff with the brown bread mixture and roast in the oven at 170 °C for about 30 minutes.
