A great pasta dish for any occasion:

Squeeze the juice of 2/3 of the limes and boil with enough water, the sugar and saffron. Add the noodles and make in it eight to ten min.

In the meantime, rinse the remaining lime and separate the peel with a zester. Remove the zest from the lime and fillet. Rinse kumquats and cut into slices.

Heat butter. Brown almonds briefly. Add lime pieces, cane sugar, kumquats, zest strips and liqueur and steam for five minutes.

Drain pasta and arrange with stewed kumquats. Garnish with lemon balm.

Note inventor: also works with candied kumquats, accordingly do not add cane sugar, or reduce mass.
