Arrange as a dish on a flat plate. Dice the scraped pineapple flesh, stir with the turkey breast cubes, curry and juice of one lemon, add the spring onion rolls and mung sprouts and season well with salt and freshly ground pepper. Pour everything into the arranged pineapple dish and garnish with the fruit.

Tip: Use creamy natural yogurt for an even finer result!
