For the roasted cassava flour with egg, in a heavy frying pan, render the fat at high temperature. Sauté the onion slices in it for 5 minutes until translucent, stirring constantly. They should become soft and translucent, but not brown.

Reduce the heat and pour the egg into the frying pan, stirring constantly. Once the egg has set, slowly add the cassava flour.

Roast for 8 minutes, stirring constantly until it turns a golden hue. Be careful not to let it burn. Finally, add salt and parsley and serve the roasted cassava flour with egg garnished with olives and hard-boiled eggs.
