For the fish in puff pastry with herb yogurt sauce, preheat the oven to 200°C top and bottom heat. Defrost the spinach and mix with finely chopped garlic, salt and nutmeg.

Roll up the puff pastry and cut it into 4 rectangles of the same size. Place some spinach in the center of each rectangle, place a fish fillet on top and the remaining spinach on top. Fold the sides of the pastry over the fish and seal the edges well.

Place the four packets on a baking sheet, brush with a little milk and sprinkle generously with sesame seeds. Bake the fish in puff pastry with herb yogurt sauce for about 25 minutes.

Meanwhile, mix the yogurt with the herbs and season with salt to taste. Serve the finished fish parcels with the yogurt sauce.
