Pear & Walnut Salad with Penne & Goat Cheese

Pasta dishes are just always delicious!

Bring salted water to a boil in a large saucepan. Cook penne in it with oil (I) until al dente. Drain, then rinse under cold water.

Mix radicchio and chopped lettuce in a large salad bowl. Add pears, nuts, pasta, basil and cress.

Mix juice of one lemon, oil (Ii) and vinegar, add to salad bowl form, mix well.

Add onion, tomato, carrot and cheese and mix thoroughly.

Leave the salad to cool for at least 1 hour before serving.

Note (tom): Mix in lettuce only after it has been infused, will remain crunchier.
