Cucumber sauce:


Remove the stalks and cut the melanzani lengthwise into 8 thin slices.

2. place slices on board or plate and sprinkle generously with salt to draw out bitterness. Rest.

Meanwhile, prepare the sauce. Mix olive and sesame oils, season with pepper and set aside.

4. for the pesto, chop the basil, pine nuts, garlic and cheese very finely with a food processor. When the machine is running, gradually pour in the oil in a thin stream. Season to taste.

For the cucumber sauce, pour yogurt into a wide-mouth mold. Remove the cucumber seeds and finely dice the flesh. Stir into yogurt with mint sauce.

6. wash the slices of melanzan and dry them with kitchen roll. Brush with oil mixture and grill on a hot charcoal grill for about 10 minutes. Turn once to the other side. The melanzani should be golden and soft.

7.Place melanzani slices on a serving plate form and bring to table with either cucumber sauce or pesto.

Tip: Use creamy natural yogurt for an even finer result!
