For the baked melanzani, wash the melanzani and cut into 2 cm thick slices. Beat eggs with salt and a little water. Mix breadcrumbs with oregano.

Dredge the slices first in flour, then in the egg and finally in the breadcrumbs. Press the breadcrumbs well. Heat the oil and fry the slices of melanzana in the hot fat for about 3-5 minutes until golden brown.

Drain on a paper towel and serve the fried melanzani with tartar sauce and potato salad.
