For the baked melanzani rolls, finely slice the melanzani lengthwise and salt. Leave to stand for a while.

Mash feta cheese, season and add olive oil. Pat the melanzani dry, add the feta cheese and roll up. Coat with flour, egg and breadcrumbs.

Fry in hot olive oil until golden brown and drain the baked melanzani rolls on paper towels.
