Clean the lettuce, rinse, pluck into bite-sized pieces and then spin dry. Clean the young onions, rinse them and cut them into fine rings, including the crunchy greens. Clean mushrooms, grate and cut into fine slices. Sprinkle mushrooms with juice of one lemon.
For the dressing, mix honey, mustard, vinegar, salt and pepper. Add 1 tsp oil until a creamy dressing is formed. Preheat a broiler. Place the goat cheese in an ovenproof dish, brush with 1 tsp of oil and cook under the hot broiler for about 4 minutes until lightly browned. Mix the lettuce, spring onion rings and mushrooms with the dressing, arrange on a plate and place the goat cheese on top.
Tip: Instead of the goat cheese, you can also gratinate cubes of sheep’s cheese. If you don’t have purslane, use lettuce or arugula.
