For the stuffed sausage bowls, first beat the eggs in a bowl, beat them loosely and season with salt and pepper. Cook the peas in a pot of salted water until soft, strain and toss in a little butter. Season again to taste.

Meanwhile, place the unpeeled sausage slices in hot fat and fry over medium heat on one side until they curl into small bowls. At the same time, in another pan, fry the beaten eggs in a little fat until fluffy. Season with salt and pepper.
