Pears with Goat Cheese

For the pears with goat cheese, wash arugula, spin dry and cut a little smaller.

Toast pine nuts in a pan without fat until fragrant. Leave to cool.

Peel shallot and chop very finely.

Squeeze lemon.

Mix olive oil and lemon juice and season with salt and pepper. Add sugar to taste.

Cut goat cheese roll into slices.

Peel pears, cut in half, remove core and cut into fans.

Spread arugula on salad plate, sprinkle diced shallots on top, place pear halves and goat cheese slices on top.

Drizzle dressing over it and serve the pears with goat cheese sprinkled with the pine nuts.
