For the herb chicken cubes, cut the chicken fillet into cubes and place in a bowl. Drizzle with olive oil so that the meat is nice and shiny.
Squeeze in garlic cloves. Pluck off rosemary sprigs, wash and add to the meat. Sprinkle with dried herbs such as oregano, thyme, tarragon.
Season with salt, bell pepper and paprika seasoning and let stand for an hour. Heat olive oil in a frying pan and sear at high temperature.
