Palak Paneer, Spinach with Cheese Cubes

*****- Preparation -***** Dry paneer and cut into 1cm cubes. Heat oil in a karai or possibly frying pan and stir-fry paneer cubes over medium heat until lightly browned, about 4 minutes. Remove and set aside. Oil in the karai.

Clean fresh spinach, rinse, drain and chop to taste. Defrost frozen spinach and chop if necessary. Peel onion, cut in half lengthwise and cut into rings. Peel and crush garlic clove. Peel ginger and grate finely.

Fry onion, garlic and ginger in remaining oil over medium heat for 3-5 min until golden brown. Add turmeric, cumin, coriander and chili spice and sauté for about 2 min. Add chopped spinach and cook on medium heat for about 10 min with lid closed.

Add plenty of salt and sugar to spinach form and mix well. Add whipped cream and fried paneer cubes and cook for another 5 minutes at low temperature with closed lid.

Serve warm with long grain rice or chapati.
