Instructions:

(*) Filet of the Loup de Mer fried in Melanzane with orange beurre blanc.

Cut the melanzani lengthwise into thin slices and put them in a little bit of clear soup for about five minutes, then drain.

Cut or grind basil leaves with olive oil, season with pepper and salt and mix with bread crumbs. If you like, add a little bit of pressed garlic.

Place four slices of melanzana on top of each other, overlapping, and spread with the basil mixture. Wrap the fish fillets in it and roast them in olive oil on both sides for a total of about eight minutes.

Serve with the orange beurre blanc (see sep. recipe), topped with browned pine nuts if desired.
