It simply belongs to the English cuisine and goes really well with cooked lamb. Who would like to have the mint sauce rather a little sweeter, which should add half of the vinegar at the beginning and refill if necessary….

The mint sauce can be used not only with lamb. Strained, it also gives a fresh flavor to salads where a sweet flavor is desired. Simply reduce the amount of vinegar in the vinaigrette and replace it with mint sauce.

Rinse the mint leaves, dry them, chop them coarsely and grind them finely with half of the sugar in a mortar.

Make the remaining sugar with the vinegar, water and juice of one lemon until the liquid is clear.

Add the crushed mint, season with salt and cool.

The sauce can be passed through a sieve or possibly brought to the table with the leaves.
