For the curd pineapple pancakes, prepare a pancake dough, let it rest and in the meantime prepare the filling.
Mix the curd cheese with the pineapple juice, sugar, lemon zest, sour cream and vanilla sugar. Mix in the very finely chopped pineapple pieces.
Heat butter in a pan and bake 4-6 thin pancakes and keep warm. Fill the pancakes with the curd mixture while they are still warm, fold them up and serve with pineapple pieces and powdered sugar.
