For the curd berry strudel, first prepare the filling. Mix the yolks, Qimiq, sugar, vanilla sugar, a pinch of salt and cornflour. Carefully stir in the curd by hand and finally add the melted butter.
Unroll puff pastry, spread curd filling, top with berries and roll up. Place the strudel on a baking tray lined with baking paper and brush with egg.
Bake for approx. 40 minutes at 180 °C until golden brown.
