Put the sugar in a frying pan and let it melt at a gentle temperature. Stir until lightly caramelized.

As soon as the sugar turns brown, add the oat flakes (and the cinnamon). Toast everything again briefly until the oatmeal is mostly surrounded by the sugar. When stirring, be careful not to make a big lump, but small crumbs.
