For the curd cheese strudel, prepare a yeast dough from the ingredients and let it rise in a warm place, covered, to double its height.
For the curd filling, mix sugar, cornstarch, egg and lemon zest until thick. Add curd cheese and raisins. Knead and roll out the dough, spread with the curd filling and roll into a strudel.
Place on a baking tray lined with baking paper. Brush the strudel with the egg, let it rise (about 15 minutes) and brush it again with egg. Bake in a preheated oven at 170 °C for about 40 minutes.
