For the cucumber cold dish, peel and core the cucumber and chop into 5 mm cubes, season lightly with salt and let steep for 15-20 min.

Peel and grate the ginger.

Halve chili peppers lengthwise, stone and chop very finely.

Pluck coriander leaves. Put a few leaves aside. Finely chop the rest.

Stir kefir until smooth. Squeeze the cucumber cubes and stir into the kefir.

Season with chili, sugar, ginger and chopped cilantro. Refrigerate for at least 1 hour. Season again with salt if necessary.

Decorate the cucumber cold dish with the remaining coriander leaves and serve cold.
