Instructions:

Brush the salsify under running water and – also under the water – peel with a peeler. Cut them into pieces about 10 cm long and cut them in half lengthwise. Immediately place in cold water and add half of the lemon juice.

Let the water boil. Add the remaining juice of one lemon and a little salt and fill in the salsify. Cook for 10 to 15 minutes. Drain, measuring out the indicated mass of cooking stock.

Butter a square baking dish and layer the salsify pieces in it in a grid pattern. Divide the eggs. Mix the egg yolks, cream, the indicated amount of broth and the cheese. Whip egg whites with salt to egg whites and fold into egg yolk mixture. Spread evenly over the salsify.

Place in the middle of the 200 °C oven and bake for about 20 minutes.

Serve with: chops, cutlets, chicken breasts, boiled sausages, ham, potatoes, pasta, long grain rice.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
