Roughly grate the peeled carrots and put them in a saucepan with the water. Cover and simmer on low heat for 10 minutes. The water should have evaporated. Add lime juice, lime zest and preserving sugar to the carrots form. Bring to a boil while stirring and cook for 5 minutes. Then fill hot into clean jars and seal on the spot.
