For the chorizo and mushroom skewers, heat the olive oil in a frying pan and stir-fry the chorizo for 20 seconds.

Add the mushroom caps and sauté for 1-2 minutes until the mushrooms begin to brown. Thread 1 bell pepper piece, 1 chorizo piece and 1 mushroom head onto cocktail skewers until all ingredients are incorporated.

Serve hot or piping hot.
