Green sauce:


Cut the cold boiled beef very thinly and spread it on 4 plates.

Whip the marinade ingredients until creamy and spread evenly over the boiled beef. Rinse the kitchen herbs, dry on kitchen paper and chop finely with a chopping knife.

Stir the sour cream or crème fraiche, yogurt and mustard and season well with salt and freshly ground pepper. Finely dice the shallots and eggs and stir into the sauce.
