For cheese spirals with ham and leek, clean the leek and cut into rings. Cut the broccoli into florets and blanch in enough salted water with the leeks. Then drain and rinse with cold water.

Cook the pasta according to package directions in sufficient salted water until al dente. Melt the butter in a pan and add the flour. Cook, stirring constantly, until lightly browned.

Gradually add the milk, stirring constantly. Season to taste with nutmeg, pepper and salt. Add the pasta, extra sausage, leeks and broccoli to the sauce and allow to warm through briefly.

Finally, mix in the shredded cheese. Then arrange on 6 warmed plates.
