For the spicy goose legs with parsnips wrapped in bacon, cut the goose legs in half at the joint and remove the left and right side of the bone. Brush with a little olive oil. Grind the spices in a mortar and season the goose legs all over.

Peel the parsnips, remove the ends and then cut lengthwise into wedges about 3 cm thick. Wrap the slices all around with bacon and spread on the grill tray.
