For the Asian tofu soup, clean, wash and slice the carrots. Then clean, wash and quarter the mushrooms. Slice the leek, peel the ginger and chop finely.

Cut the tofu into 1 cm cubes, heat the oil in a pot, sauté the vegetables and add water. Add tofu and spices and cook slowly for about 25 minutes. Season the Asian tofu soup with salt, pepper and soy sauce.
