For the crème brûlée, cut the vanilla bean lengthwise. Place in a saucepan with the whipped cream and honey. Heat the pot and bring the mixture to a boil. After a short boil put the pot aside for a while and let it stand. In the meantime, carefully mix the yolks with the sugar, but make sure that there is no foam or bubbles. Remove the vanilla bean from the pot and carefully stir in the egg-sugar mixture. Pour the mixture into crème brûlée bowls. Place them on a baking tray with hot water and put them in an oven preheated to 90 °C. The crème brûlée must now bake for about 60 minutes. After 60 minutes, remove the bowls and refrigerate. Just before serving, sprinkle the brown sugar over the cream and caramelize it using a Bunsen burner. You have to be a little careful, because it is easy to damage the crème brûlée itself, so it is better to keep the Bunsen burner a little further away than too close.
