For the Indian vegetable curry, dice the melanzani and tomatoes. Cut garlic and onion into small cubes. Roughly chop the spinach, chop the coriander.

Heat the oil and fry the onion and garlic in it until hot. Add the melanzani and sauté for about 5 minutes. Add the tomatoes and spinach and sauté again for about 3 minutes. Add the coconut milk.

Season with chili powder, salt, pepper and coriander and serve the Indian vegetable curry.
