Add finely grated horseradish to the mixed butter and season with a little salt and a trace of lemon juice. This horseradish butter is used instead of mayonnaise to garnish cold dishes and the like. It is decorated with pickles or capers.

Tomato slices, olives, egg slices and parsley look nice.

Add to cold roast beef, tongue and fish.
