For the Dorade “Mediterranean” peel onions and garlic and chop finely with olives and capers. Wash the tomatoes, remove the stalk, remove the seeds and finely dice. Heat the vegetable cream in a pan and sauté the onions. Add garlic, olives, capers, tomatoes and breadcrumbs and fry for about 3 minutes. Season with salt and pepper and fold in the herbs. In the meantime, rinse the gilthead in cold water and pat dry. Spread the tomato-herb mixture on the inside of the fish. Wrap each gilthead tightly with aluminum foil and place on the grill for about 30 minutes.
