For the quick egg sauce, make a bechamel sauce with butter, flour and milk. Season with salt, pepper, nutmeg and lemon juice.

Mix with chopped parsley and chopped egg yolk.

If necessary, dilute the quick egg sauce with whipped cream and use it for gratinating or for refining vegetables.
