Slice the veal, pound until tender and salt evenly. Beat the eggs with a fork.

Turn cutlets in flour on both sides, then pull through the egg and turn in the breadcrumbs and press down tenderly.

Heat clarified butter in a deep frying pan, place cutlets and fry on both sides for 3-5 minutes.

Drain on paper towels and serve the Wiener Schnitzel.
