Prepare a batter for Wiener Wäschemädel and let it sit for 20 minutes. Dip the apricots in boiling water for 10 seconds, peel off the skin, cut open and dip in apricot brandy.
Leave to infuse for 5 minutes, remove the stone and replace it with a marzipan stone. Dip the apricots in batter and fry them in hot oil until they float.
