For the vegan apple muffins, squeeze the lime. Core the washed apples and cut into small cubes. Drizzle with the lime juice so that the apple pieces do not turn brown.

Preheat the oven to 180°C hot air. Mash the bananas with a fork and mix together with the apple pieces, sugar, vanilla sugar, soy yogurt and oil.

Sift the flour with the baking powder. Mix the banana-apple mixture with it.

Place a muffin tray on a baking paper and put a paper cup in each opening. Spread the muffin mixture evenly in the cups and bake in the oven for about 25 minutes, until the vegan apple muffins have a golden brown color.
