For the coconut orange cake, mix flour with coconut flakes, baking powder and salt well. Separate eggs and beat snow. Grate orange peel from the oranges.
Mix fat, sugar, orange peel, vanilla sugar and egg yolks well. Mix the two masses and then gradually stir in the coconut milk and rum.
Finally, gently fold in the snow. Spread the mixture on a baking tray lined with baking paper. Bake at 160 °C for 30 minutes. Then spread the hot cake with orange marmalade.
Heat the chocolate together with the margarine in a water bath. Pour the melted chocolate glaze over the cake and spread it evenly.
If the glaze doesn’t smooth out nicely, you can draw a pattern over it with a fork. Refrigerate to allow the glaze to harden.
When serving, garnish with orange marmalade and lemon or orange geranium.
