For the vanilla crescents, prepare a shortcrust pastry from spelt flour, butter, grated almonds, honey and the pulp of a vanilla pod.

Let the dough rest for 1 hour. Then put it through a meat grinder, cut off pieces of equal length and shape into croissants.

Bake at 190 degrees for about 10 minutes. Sprinkle the vanilla crescents with powdered sugar and vanilla sugar while they are still warm.
