While still warm, cut the peeled potatoes into small slices and season with sugar, salt and pepper while still warm. Mix with onions, vinegar and boiling vegetable or beef broth (should be light). Cover and let stand for 20 minutes. Then add the oil and mix repeatedly. Decorate with egg, slices of tomatoes and sausage. This juicy potato salad goes very well with roast pork.
