For stuffed brie, peel pears and cut in half. Cut pears into 1/2 cm slices and drizzle with pear brandy. Cut cold brie into strips.

Top half of the Brie slices with pear slices and sprinkle with parsley and sprinkle with cayenne pepper. Place the remaining Brie strips on top and press down gently.

Put the whole thing on a baking tray covered with baking paper and bake in the preheated oven (220 degrees) for about 5 minutes. Arrange on plates with some green salad and serve immediately.
