Umbrian Bread Salad

Remove the crust from the bread and crumble with your hands. Add tomato quarters, cucumber strips, celery slices, chopped celery greens, basil leaves and onion rings. Stir capers through with the vinegar, liquid, salt pepper and oil. Pour over the lettuce. Mix well.

Allow to infuse for about an hour.
