For the spring coleslaw, wash, peel and grate the carrots and put them in a bowl. Also grate the white cabbage as finely as possible, preferably with a grater, and add to the carrots.
Peel the red onion, chop it finely and add it to the rest of the vegetables. Now salt the mixture and add the mayonnaise and yogurt.
Pepper to taste and put the spring coleslaw in the refrigerator for at least 1 hour to infuse.
