For the Spicy Anti-Hungover Tortilla, peel the onion and cut into small cubes. Wash the bell bell pepper, dry it, cut it open, remove the core and cut it into thin strips.

Roughly dice the salmon, finely chop the parsley, cut open the chili pepper, remove the seeds and finely chop the chili.

Beat the eggs, whisk well and mix with the remaining ingredients. Season with salt and pepper.

Pour the mixture into an oven-proof pan and let it set on the stove for about 2 minutes, stirring occasionally, then bake in a preheated oven at 180° C for about 15-20 minutes until done.

Drizzle the spicy anti-hangover tortilla with a little olive oil and serve while still in the pan.
