For stuffed peppers with beetle beans and tortilla chips, first cut the peppers in half lengthwise and remove the seeds and whites. Peel the shallot and chop finely. Wash and coarsely chop the cilantro. Grate the cheese.

Heat some oil in a pan and sauté the shallot cubes until translucent. Stir in the tomato paste and pour in the soup. Add the beans. Remove from the heat and season with salt, pepper and Tabasco.

Line a baking sheet with parchment paper and place bell pepper halves on top. Fill with the bean mixture. Sprinkle with cilantro, top with tortilla chips and sprinkle with cheese. Bake stuffed peppers with beetle beans and tortilla chips for about 10-15 minutes at 180 °C.
