For simple gnocchi, peel the cooked potatoes and press them through a potato ricer. Spread the mixture on a work surface and mix with flour and the eggs to form a dough that is not too firm. If the dough is too soft, work in some more flour. Let rest in a cool place for about 60 minutes.

Form a dough roll as thick as your thumb. Cut off pieces of dough about 3 cm long, shape into rounds and press each lengthwise with a fork. This will pull the balls over the back of the fork.

In a large pot, bring enough salted water to a boil. Drop the gnocchi into the boiling water when they rise and let them sit for another 2-3 minutes. Carefully lift out and drain.
