For the salmon with spinach and jasmine rice, wash the fresh spinach thoroughly and drain. Cook the rice according to package instructions. Wash the salmon and pat dry, then season with salt and pepper.

Then heat 2 tablespoons of oil in a pan and sear the salmon on both sides for 2 minutes. Then remove from the pan and squeeze the lime over it.

Then keep the salmon warm. Peel and finely chop the garlic, ginger and onions. Heat another 2 tablespoons of oil in a pan and then lightly fry them.

Then deglaze with sherry and ketjap manis. Simmer for 1 minute. Add the spinach and let it simmer down. Season to taste with salt and pepper.

Arrange 4 pre-warmed plates with salmon, rice and spinach decoratively.
