A great cake recipe for any occasion:
Remove the skin from apples and chop, soak in rum and infuse. Make a batter with the remaining ingredients and stir in the apples at the very end.

100 g butter
100 g sugar
1 pinch of salt
2 eggs
200 g flour
2 teaspoons baking powder

750 g apples, coarsely grated 3 tablespoons juice of one lemon

Mix salt, butter, sugar and eggs to a foamy mixture. Mix flour and baking powder and stir into the foam mixture. Empty this batter into the greased springform pan and smooth it out.
For the topping, mix butter, sugar and eggs again. Stir in grated coconut, coarsely grated apples and juice of one lemon and smooth this amount on the sponge mixture. Bake the cake in the heated oven at 180 °C for about 1 hour and 10 minutes. Remove the finished cake from the mold and cool on a cooling rack.
