Instructions:

For the apple or plum cake, first prepare the curd cheese oil dough. To do this, squeeze the curd in a tea towel if it is too moist.

Beat the curd with oil, sugar, egg, milk, salt, vanilla sugar and lemon zest until fluffy. Sift flour and baking powder. First stir half of the flour and baking powder mixture into the curd mixture, then knead in the rest until a smooth dough is formed.

Roll out the dough on a floured work surface to about 1/4 cm thick, brush with melted butter and place on a baking sheet lined with parchment paper.

Cover tightly with peeled, quenched apples or pitted, incised plums, bake at 200-220 °C for about 25-30 minutes, covering apple pie with aluminum foil for the first half of the baking time if necessary. Allow to cool briefly, remove from the baking tray, then sprinkle the apple or plum cake with sugar.
