For the dchnellen mini cakes, mix the eggs with powdered sugar and the grated lemon zest until foamy. Mix in whole spelt flour.

Pour into a greased and floured baking pan with 6 pieces of mini cakes. Bake at 160 °C. Let cool and remove from the molds.
