Marinate roast for 2 hours, turning occasionally. Preheat oven to 210 °C / gas mark 4. Place roast in a shallow oiled roasting pan and roast for 20 min, then turn to the other side and roast for a further 20 min. Cut roast into individual ribs and bring to the table.
